This easy recipe for cucumber salsa can be made in just a few minutes and once refrigerated makes a deliciously fresh salsa which is great for the summer. Served with tortilla chips this recipe has a Mexican influence with a little chilli in the background, a simple salsa suitable for any occasion.
Preparation: 10 minutes
1 Large cucumber, chopped
3 Vine ripened tomatoes, chopped
1 Small onion, diced
1 Green chilli, diced
2 Garlic cloves, minced
1 Tbsp lemon juice
Salt to taste
- Place all the ingredients in a cazuela or bowl and mix well.
- Cover with cling film and refrigerate for a minimum of 2 hours.
- Serve in salsa bowls with tortilla chips or crisps.
